Tis The Season To Enjoy My Yummy Banana Cupcakes

20141227_164632 My oven has been revived! It’s been down for a few months now, but we got the electrician to finally buy a new cable and replace a few wires –I’m not clear on what the exact technical problem was. It still takes a while to heat up, but I’m just glad it’s been resuscitated! I think cupcakes are an excellent choice especially for the festive season. My sister saves hers for dessert with some vanilla ice-cream, I love mine as a post diner snack. We can always work off the calories later- is what I say to myself as I eat one after the other…he he To brush up on my baking skills, I looked around the kitchen and spotted some bananas, and then a light-bulb went off in my head- Banana Cupcakes! Everything felt really familiar, measuring ingredients, placing side by side my mixing bowl and mixer on the kitchen counter. So here is the recipe I used; Bakes: 12 cupcakes  You will need:

  • 1 cup plain flour
  • 1½ cup white sugar
  • 1 tsp baking powder
  • ½ cup milk
  • 100 g butter or margarine
  • 3 eggs
  • 2 mashed bananas
  • ½ tsp vanilla extract

Method: Preheat the oven to 180°C. Line cupcake tins with cases making sure there is enough margarine in the edges. 20141227_151011 Using a mixer, cream margarine, sugar and vanilla until creamy and fluffy then gradually add eggs and mix until just combined. Combine flour and baking powder and sieve through so it’s fine. Add mashed bananas and a bit of milk to creamed mixture. Mix until just combined. Place mixture into liners using a table spoon or ice-cream spoon, until each case is one-third full. After 15-20 minutes, they should be ready and feel the kitchen with a mouth-watering scent 🙂 20141227_170953 I honestly did not expect that the cupcakes would come out so delicious and crumbly, especially since I have been out of practice for a while now.
